Apparently, one of the things Lisa and I liked to do in 2020 was make cocktails on Instagram while I played with jewelry. Honestly, not a bad way to get through a very strange year.
Our first virtual happy hour involved Lillet Spritzes. Then we graduated to Mezcal Margaritas. By December, it was freezing, so naturally we took the mezcal and put it in hot chocolate.
Lisa has been one of my best friends for years, and these little virtual happy hours became such a fun excuse to get together, make something delicious and talk jewelry during a time when getting together in person wasn't exactly an option. The LIVE event may be long over, but the Cozy Hot Chocolate recipe is still very much worth making.
Makes 4 servings of hot chocolate. Add spirits individually to each mug.
1.5 oz mezcal, whiskey or brandy
1 serving hot chocolate
Whipped cream, optional
Cinnamon stick or freshly grated cinnamon, optional
Pour one serving of hot chocolate into your favorite mug. Add your spirit of choice, top with whipped cream and freshly grated cinnamon if you're feeling fancy, and enjoy.
4 cups milk, preferably whole or 2%, or your favorite non-dairy alternative
¼ cup unsweetened cocoa powder
¼ cup sugar
½ cup semisweet chocolate chips
¼ teaspoon vanilla extract
Small pinch of salt
Add the milk, cocoa powder and sugar to a small saucepan. Heat over medium-low heat, whisking frequently, until warm but not boiling. Add the chocolate chips and continue whisking until they're completely melted and the mixture is smooth. Stir in the vanilla and a pinch of salt, then serve immediately.
Make it boozy. Keep it booze-free. Add an unreasonable amount of whipped cream. Most importantly, drink it with somebody you really like. Jewelry is optional, although obviously encouraged.
